Ice Cream Cupcakes!

So my friend hosted his big BBQ summer party and I decided I needed to bake something special and summer-y to fit the occasion.

These are what I came up with:

The best thing about these is that they confused everyone. Is it a cake? Is it an ice cream? There's only one way to find out! Eat them!

There are a couple of things I will do differently when I next make these. The first is to use one less egg. The recipe says to use 3 but I think it makes it a little bit too moist. The second is to take the tinfoil off before I start decorating them. Some of them are a little crooked because the Flakes weighed them to one side.

But they still look absolutely delicious.
